Fresh, flinty and crisp - exactly what you want from a good Chablis.

A fresh and grassy edge to primary Chardonay fruit on the nose, then real edge on the palate and a long, steely finish. This wine has great definition already, but it will continue to develop for another ten years or so.

The Vauligneau area of Chablis (it means 'little valley') has only recently been granted Premier Cru status after many years of consistently producing extremely high quality wines. Award-winning Domaine de la Motte's 5 hectares face south-west, catching the evening sun, and the soils have mainly clay and kimmeridgian features, all combining to give the wine an attractive, very slightly softer edge.

20% of the wine is fermented in oak barrels for 8 - 12 months; the balance is fermented in steel tanks.

Smoked salmon or pan-fried scallops are the natural bedfellows for this Chablis; it is also a very grown-up aperitif.
