A fine bouquet of white flowers and ripe pear leads to a generous and creamy palate. The finish is long and elegant, an elegance not always found in the Languedoc, with a well balanced acidity to support the stone fruit and floral character.
The single vineyard of Peyroli lies on Mas La Chevalière’s estate just to the north of Béziers. This nine hectare vineyard is particularly suited to Chardonnay. The limestone and clay soils, similar to those found in Chablis, encourage pure, mineral flavours in the wines. The altitude of 400m ensures that this is a cool climate vineyard within an otherwise warm region of the south of France. This means that the grapes are usually picked late (around the same time as the Chablis harvest takes place) which encourages gradual, even ripening, resulting in intense floral and fruit flavours.
The wines are classified Indication Géographique Protégée because irrigation is used to avoid heat stress (and hard, bitter characters in the wines) in the southerly, sunny climate.
