Displaying the quality of fruit for which Allegrini is rightly renowned, winemaker Franco Allegrini used the modern version of the traditional 'Ripasso' method for Palazzo Della Torre, drying a proportion of the grapes before pressing to intensify colour and flavour. The grapes to be dried were hand-harvested at the beginning of September, with the grapes used for immediate vinification being picked at the end of the month.

In the second half of December the dried grapes were pressed, and the juice refermented with the newly-made wine from the fresh grapes. The wine spent 15 months in barriques and was aged for a further 9 months prior to release.

Deepest ruby red in colour, the wine has enticing aromas of cherry and dark chocolate. The texture is smooth and velvety, and the wine offers deep, dark, ripe, juicy fruit with soft tannins and a refreshing but never sharp acidity. The wine has the potential to age for at least ten years.
